Paleo Strawberry Banana Pie

INGREDIENTS 
Crust
1 ½ c. almond flour

¼ c. melted butter

½ tsp salt

tsp cinnamon 


Filling
2 ripe bananas

1 tbsp lemon juice

½ tsp vanilla extract

3 eggs, beaten

2/3 c. coconut milk 

2 cups medium strawberries 
Blueberries (if you like)


PROCESS
1. Mix almond flour, butter, salt and cinnamon in a bowl.  Press mixture into a pie plate to form the pie crust.
2. Mix bananas, lemon juice, and vanilla extract either in a food processor or by hand (you’ll need to mash the bananas first if you mix by hand).   Then gently mix in coconut milk and eggs.
3. Pour banana filling into pie crust.
4. Bake at 180 C for 35 minutes, or until set in center.  Let pie cool.
5. Top with sliced strawberries and blueberries

  1. I can't find a contact form, but I have kind of a crazy question for you. I notice you have a few good recipes and your images are decent but you haven't posted in a long time. I'm wondering if you would consider selling me the content and images on your blog and closing this blog down.   2. This pie is delicious. But the filing needs some sugar added. I made mine following the recipe (except the crust, I used another recipe) and though it was tasty it needed sugar. I also added 1 tsp of almond extract. I think if you serve it with ice cream you would not need to add sugar. Anyways, my family loved it and it turned out beautiful.

  3. I think the point is that it is paleo. For paleo families, if it isn't sweet enough, try blending in a few dates or honey. Natural and better for you :)
